February equals, chocolate, chocolate and more chocolate. At our house we try to eat healthfully, but we do not deny ourselves the occasional decadent dessert. Especially if they are homemade. The successful making of desserts requires careful construction, with each ingredient being accurately measured, and a little love too.

This months recipe is definitely decadent, but other than measuring correctly, it is super  easy to make. It refrigerates or freezes nicely for later uses. Happy Valentines!

Chocolate Oblivion Mud Cake

Serves 16

  • 3/4 lb. organic butter
  • 12 oz. semi chocolate chips
  • 4 oz. dark chocolate
  • 1 1/4 cups pure cane sugar
  • 1/2 cup rum or other liqueur
  • 1 teaspoon vanilla
  • 8 eggs
  1. Preheat Oven to 325*.
  2. In heavy saucepan over low heat, add butter, chocolate and sugar.
  3. Melt above ingredients until incorporated, stirring occasionally.
  4. Remove from heat, add vanilla and rum.
  5. Using mixer add eggs on at a time, mixing each until well incorporated.
  6. Butter a 9″ spring form pan. Wrap the outside of the pan with foil.
  7. Pour batter into pan and place foil wrapped pan in a larger baking dish with 1″ water.
  8. Lightly butter another piece of foil and cover pan. Place pan in preheated oven.
  9. Bake at 325* for 55 min. Removing top foil half way through baking.
  10. Remove from oven and let cool.
  11. Release spring form and cut into 16 wedges using a hot knife, cleaning knife after each cut.

Chocolate is best when eaten at room temperature. Serve in a puddle of  cream anglaise, or fruit coulis. Or, top with fresh whipped cream and fresh fruit.

Terra Valentine, 2006 Marraige, Spring Mountain – CA

A blend of bordeaux varietals that bring out the best in each other!

Fruity, earthy with a hint of cocoa on the nose and palate. The velvety tannins, give the wine a full smooth finish.

    Ah, homemade! I just read an article in the Nashville paper about a food critic who said that when they bring the dessert tray around he asks if any are hommemade…if they’re not he say “No thank you!”.

    If not using organic butter – don’t go all crazy on me, Jill =) …. is it correct to assume that I would use unsalted butter? Thank you for this wonderful decadent “entree” recipe! Turns out that yesterday was Dark Chocolate day, too!

    Wait a minute, this dessert has dark chocolate in it. Dark chocolate has anti-oxidants in it. Anti-oxidants are good for you. Therefore, this dessert is healthy eating at its tasty best! I’m just saying…….
