When buffalo is being served, it brings people together. That happened recently in the Washington, D.C., area when about 30 old and new fans of Wild Idea Buffalo gathered in a log cabin home built in the 1920s (although there have been many additions to the structure since then). Tom and Sarah
Jensen hosted Wild Idea’s Jill O’Brien as she prepared a “Taste of South Dakota” menu, shared the company’s story and answered questions.
A number of staff members from the office of South Dakota Sen. Tim Johnson attended as well as the Senator’s wife, Barbara Johnson. Other guests included former Virginia House of Delegate member Kris Amundson (a South Dakota native). Former CBS News “Saturday Early Show” anchor Thalia Assuras, who cooked with many famous chefs on the news program, gave the evening a thumb’s up. Jordan Wright, a well-known food writer and critic, was very complimentary.
Here is what Jill prepared:
Walleye Cakes with Green Chili Tomatillo Sauce and Fresh Sweet Corn
Buffalo Bacon, Tomato, Lettuce Cups with Basil Aoli
Buffalo Tenderloin Tartare in Mushrooms with Wojapi
Braised Chuck Roast in Potato Cups with Mirepoix and Cabernet Sauvignon Sage Sauce
Buffalo Sliders with Sweet Potato Fries
Apple Cake with Burnt Sugar Carmel and Fresh Cream
