Buffalo Vegetable Soup

April is always project month. Between spring cleaning, landscaping projects, garden & yard preparations, there is no time for lengthy cooking.
This is when I fall to 1 pot meals. Simple, delicious and only 15 minutes active time to prepare! Enjoy!

Adjust spices to you palate.

Ingredients:

  • 1 T. olive oil
  • 1 1lb. pkg. Wild Idea Ground Buffalo
  • 5 carrots, peeled and sliced
  • 5 celery stalks, sliced
  • ½ onion, diced
  • 1 Tb. black pepper
  • 2 tsp. salt
  • 1 tsp. paprika
  • 1 tsp. turmeric
  • 1 tsp. cardamom
  • 1 quart vegetable stock or organic chicken stock
  • 2 cups chopped spinach
  • ¼ cup chopped fresh cilantro
  1. In heavy soup pot over medium high heat, heat oil.
  2. Add ground buffalo, crumbling into small pieces. Stir.
  3. Add carrot, celery and onion. Stir.
  4. Add seasoning, stir and sauté for 5 minutes.
  5. Add stock, bring to full boil, reduce heat to low, cover and simmer for 10 minutes.
  6. Add spinach and cilantro, and bring to full heat.
  7. Adjust seasoning to taste.

Serve with crusty bread. You will want a second helping!

Wine Pairing:

Bridlewood Estate Winery Reserve Viognier , Central Coast CA. The spicy fruity nose, with full apricot flavors and a citrus finish, complement the seasonings of this dish nicely.

    I want to say this before anyone else does. I am a supporter of Buffalo Vegetable Soup. Even saying this (or typing if for that matter) gives me so much pleasure.

    I just love this recipe.

    Um…typing “IT”….is what I meant to say.

    Pleasure is as pleasure does.

    Just like the 5th dimension….that being perception.

    I am a believer of the Buffalo and the Buffalo remain as they always will.

    No doubt in that just as (justice) there is no doubt so much else.

    No doubt. No doubt that a good meal that smells pleasant from the get go is a mean to enjoy and appreciate and love and share with those you care about.

    That is why every family needs a good cook!

    Peace Jill – you do know that a Buffalo Vegetarian recipe is sort of like Buffalo Wings made from some poor hapless chickens? Don’t you? I sure hope so, but it doesn’t really even matter because…..well, every family needs a good cook, and this we all know is true.

    So, I bid you a far adiue – a far goodybye if you will. I know my spelling is atrocious, but my intent is pure. That I know.

    OK – here is my recipe for some Buffalo Vegatable soup…..

    Take a lonesome losing buffalo and grind it up….

    Add some spice.

    Add a few veggies – why not?

    Wal-la. Buffalo Vegetable soup.

    ps – the above message was a fallacious facetious joke for the sole purpose of humor and nothing humor. I mean nothing but a good laugh, and I have just had mine, so this above post worked for me…..

    Honestly, I doubt I will ever make it to the ranch, but it ought be evident my now….I really want too.

    Its just I’m stuck here in the forest, but don’t get me wrong, I truly enjoy being amongst the trees and if one falls I will never tell. So don’t ask me if it made a sound, but if you must know….well….some things are obvious and I’m not kidding around anymore.

    here is another recipe from the cook of me…..(ha, ha).

    1) 1 pound buffalo meat or thereabouts.

    2) A few sprinkes of Montreal Steak seasoning per taste.

    3) Grill as desired, but best if you do it without overdoing it…..

    4) Enjoy with a nice glass of red wine as well as more than one side dish.

    If I was gonna have some pork, should I save the red wine for the mealtime, or should I have a glass before?

    Of course, and please, even though I have never met you, in a way, I feel as if I know you, and that question was rhetorical because I think there is no easy answer.
